Brinjal & Chickpea Curry

Serves: 1- 2 people 

Prep time: 30 - 40 mins  

Cook time: 25 mins

A hearty, flavour-packed curry featuring tender brinjal and protein-rich chickpeas simmered in aromatic spices and creamy coconut milk. Perfectly comforting and delicious.

Ingredients:

  • 2 medium/large brinjals, diced

  • 1 can chickpeas, drained

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tsp cumin

  • 1 tsp turmeric

  • ½ tsp paprika

  • 1 can diced tomatoes

  • ½ cup coconut milk

  • 1 tbsp olive oil

  • Salt & pepper to taste

Optional: ½ Green pepper, diced

Instructions:

  1. Salt brinjal cubes, let sit for 20 minutes, rinse, and pat dry.

  2. Heat oil in a pot and sauté onions and garlic. (and green pepper)

  3. Add spices and cook for 30 seconds until fragrant.

  4. Stir in brinjal, chickpeas, and tomatoes. Simmer for 20 minutes.

  5. Stir in coconut milk, season with salt and pepper, and cook for 5 more minutes.

  6. Serve with rice or flatbread.

  7. Optional: Add cashew nut butter for creamy flavour and healthy fats
