Creamy Vegetable Soup

A wholesome, dairy-free soup that's packed with fresh vegetables and blended to velvety perfection. Light yet satisfying, it's the perfect guilt-free comfort food.
Ingredients:
1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 carrots, peeled and diced
1 small sweet potato or white potato, diced
1 cup zucchini or broccoli
1 cup cauliflower
1 tsp ground cumin or smoked paprika
Salt and pepper to taste
1 litre vegetable stock
1/2 cup light coconut milk or 1/3 cup plain Greek yogurt (add after blending)
Instructions:
In a large pot, heat olive oil. Sauté onion and garlic for 3–4 minutes.
Add remaining vegetables and spice. Cook for 5 minutes, stirring.
Add the stock and bring to a boil. Lower heat and simmer for 20 minutes until all veggies are soft.
Blend until smooth with a stick blender or in batches.
Stir in the coconut milk or yogurt. Adjust seasoning as needed.
Heat gently (don’t boil if using yogurt) and serve.
