Creamy Vegetable Soup

Serves: 4 -6 people

Prep time: 15 - 20 mins

Cook time: 25 - 30 mins

A wholesome, dairy-free soup that's packed with fresh vegetables and blended to velvety perfection. Light yet satisfying, it's the perfect guilt-free comfort food.

Ingredients:

  • 1 tbsp olive oil

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 2 carrots, peeled and diced

  • 1 small sweet potato or white potato, diced

  • 1 cup zucchini or broccoli

  • 1 cup cauliflower

  • 1 tsp ground cumin or smoked paprika

  • Salt and pepper to taste

  • 1 litre vegetable stock

  • 1/2 cup light coconut milk or 1/3 cup plain Greek yogurt (add after blending)

Instructions:

  1. In a large pot, heat olive oil. Sauté onion and garlic for 3–4 minutes.

  2. Add remaining vegetables and spice. Cook for 5 minutes, stirring.

  3. Add the stock and bring to a boil. Lower heat and simmer for 20 minutes until all veggies are soft.

  4. Blend until smooth with a stick blender or in batches.

  5. Stir in the coconut milk or yogurt. Adjust seasoning as needed.

  6. Heat gently (don’t boil if using yogurt) and serve.
